Pan-seared with white beans, roasted peppers 

and artichokes in a light saffron parsley broth

with vegetables with Rioja Au jus sauce

Stuffed with sweet plantain, goat cheese, peppers,

chorizo and a side of saffron mashed potatoes and Madeira shallot reduction
